2lbs of Tomatoes, Cut into chunks (mixed variety is great!)

1 English cucumber, peeled and cut into chunks

1 Red Bell Pepper, cored and deseeded, cut into chunks

¼ Red Onion, peeled

2 Garlic cloves

1 medium size lemon, juiced

Handful of Basil leaves

1TBSP Olive Oil

Salt and Pepper to taste

Optional: Crushed Red Pepper or Fresh Jalapeño

 

Add all ingredients to a food processor and puree until smooth. Season with salt and pepper. Cover and chill for 1-2hrs before serving.

Garnish with cucumber or basil.

 

Makes 4 servings.
