1lb chicken breast or thighs, cubed

8oz of riced raw cauliflower

6 oz of riced raw broccoli

1C celery, chopped

1C brown mushrooms, sliced

½ yellow onion, chopped

3-4 garlic cloves, minced

6C chicken broth

4 Bay leaves

1 TBSP garlic powder

1 1/2 TSP Thyme

1 TBSP oil of choice

Salt and Pepper to taste

Splash of Sherry Vinegar or splash of lemon juice


In a large pot add the ingredients except the mushrooms and riced broccoli and cauliflower and bring to boil.

In a separate saucepan, sauté the mushrooms. Once the soup is boiling add the mushrooms, riced broccoli and cauliflower and reduce to a simmer for about 8 minutes.


Add a splash of sherry or lemon juice and season with salt and pepper to taste.
