Keto Meatloaf

1Lb Ground Beef

1Lb Ground Turkey

1C Ground Pork Rind

2 Eggs

1 Small onion, finely diced

4-5 Cloves Garlic minced

Salt and Pepper

1/2C Tomato sauce

2TBSP Olive oil

3TBSP Yellow mustard

2TBSP Worcestershire sauce

1-2TSP Monkfruit sweetener

2TSP Apple cider vinegar

 

Preheat oven to 350*. In a large bowl combine the ground beef, ground turkey, eggs, pork rinds, garlic and onion and mix gently with your hands. Add salt and Pepper.

Lightly grease a loaf pan, casserole dish or sheet pan and hand form a loaf making sure the loaf is evenly formed roughly 2 1/2 in high and 5 in long. Bake for 30 minutes.

In a small bowl combine the tomato sauce, olive oil, mustard, worcestershire, monkfruit sweetener and ACV and set aside.

Once the meatloaf has baked for 30 minutes coat the meatloaf with the sauce and bake an additional 35-40 minutes.

Let cool before slicing. ENJOY!
