1/2 of a Roasted Spaghetti Squash
2 Eggs- Beaten
1TSP Salt
2 Onion Sprigs-chopped
1/4TSP Baking Powder
1/2C shredded firm cheese
Heat your waffle iron on the second to highest level. Strain the thawed spaghetti squash in small amounts throughly with a tea towel. You want to make sure all the water is squeezed out so they look like little balls. Add all ingredients to the spaghetti squash “balls” and mix together.
Spray your waffle iron with oil and then spoon mixture onto the waffle iron and wait for the waffle iron to signal being done.
Enjoy! Makes 4 waffles.
