1lb Breakfast sausage

3c Mushrooms, sliced

6-8oz Spinach

10 Eggs

1 Tomato, sliced

2-3 Green Onion, chopped

Cayenne

Basil fresh or dried

Salt and Pepper

 

Preheat Oven to 350*. In a non stick skillet that is oven safe, add olive oil and cook the breakfast sausage. Add the mushrooms and cook for 5 minutes. Add spinach salt and pepper, cayenne and basil and cook until wilted.

Whisk the 10 eggs in a bowl and season with the salt, pepper, basil and cayenne. Pour over the sausage/vegetable mixture. Cook for 2 minutes without stirring. Top with the tomato and green onion. Bake for 30-35 minutes or until a knife inserted in the center knife comes out clean.

Great for dinner and kid approved!!
